Juicy Juicy Mango

Mangos are one of my favourite fruits. I love summer, and there is just something so delicious about a fresh mango. Yum! We had a couple in the fridge the other night, and I was in the mood for some comfort food. What is more comforting than curry right? Warm, spiced, delicious. Double Yum!

What you will need:
1 chicken breast
1 large ripe mango chopped into chunks
1 cup coconut cream
1/2 cup of water
1/2 red onion
1 tbsp butter
1 clove of garlic
1 tsp turmeric, cumin & dried chilli
1 lime

How you make it:
1. Sautee the finely diced onion in the butter and minced garlic.
2. Add the spices, juice of the lime and half of the mango chunks.
3. Pour in the coconut cream and the water to the pan and simmer for 10 minutes.
4. Take off the heat, and blend the mixture until silky smooth.
5. Cut the chicken into chunks, and cook until browned.
6. Add the other half of the mango chunks and the mango puree to the pan with chicken, and slowly heat for 10 minutes.
7. Serve this delicious curry on a bed of green beans and carrots. mmmm tasty!
